Green, Russian Red and Cavolo Nero all form part of the kale family. Kale is produced in the UK from June until March and is at its most plentiful from October. Kale is an attractive vegetable with its deep green colour and curly leaves. Kale has a much richer flavour than cabbage and it is successful in harsh climates where more delicate cabbage varieties fail. Cavolo Nero has been used by Italians for generations and is gaining popularity month by month. Sourced from different farms in Yorkshire and Lancashire.
