Red Cabbage Back to Produce

Grown in acidic soil, it's actually the acid that makes this well known vegetable turn red. It's Easy to grow and available from Yorkshire and Lincolnshire all year round. The flavour can be complimented with a host of different ingredients when braised. Good value, a chef can draw a lot of portions from each head as there is very little waste. Peaks in season when the weather is cooler but not freezing.
