Roasted Leeks with Cheese & Sage Crumble

Roasted Leeks Topped With Yorkshire Blue And Sage Crumble

Makes 8 portions. Cost per portion £1.45

Ingredients:

  • 8 large leeks, trimmed and halved lengthways
  • 4 tbsp olive oil
  • 100g butter
  • 120g breadcrumbs
  • 150g Yorkshire Blue cheese, crumbled
  • 2 tbsp fresh sage, finely chopped
  • Salt and pepper

Method:

  1. Preheat oven to 200°C . Place the leeks cut-side up on a tray, drizzle with olive oil and season. Roast for 20-25 minutes until soft and slightly caramelised.
  2. Melt the butter in a pan, stir in the breadcrumbs, sage and a little seasoning. Cook until golden then mix through the crumbled Yorkshire Blue.
  3. Spoon the crumble over the roasted leeks and return to the oven for 5 minutes until the cheese melts slightly.
  4. Serve warm as a side or a starter with a drizzle of honey or balsamic glaze
