Roasted Leeks Topped With Yorkshire Blue And Sage Crumble
Makes 8 portions. Cost per portion £1.45
Ingredients:
- 8 large leeks, trimmed and halved lengthways
- 4 tbsp olive oil
- 100g butter
- 120g breadcrumbs
- 150g Yorkshire Blue cheese, crumbled
- 2 tbsp fresh sage, finely chopped
- Salt and pepper
Method:
- Preheat oven to 200°C . Place the leeks cut-side up on a tray, drizzle with olive oil and season. Roast for 20-25 minutes until soft and slightly caramelised.
- Melt the butter in a pan, stir in the breadcrumbs, sage and a little seasoning. Cook until golden then mix through the crumbled Yorkshire Blue.
- Spoon the crumble over the roasted leeks and return to the oven for 5 minutes until the cheese melts slightly.
- Serve warm as a side or a starter with a drizzle of honey or balsamic glaze
