Fresh produce seasonal highlights – Winter 2025 / 2026
We’re celebrating the best of British fields this winter with rich roots, crisp greens and sweet orchard
fruits. Some of the highlights are Brussels sprouts, which are short in season but big on flavour, the versatile celeriac, and Lancashire leeks, which are deliciously sweet and buttery when roasted whole. Parsnips are perfect right now; the sugars peak after the frost, giving a natural caramel note. When it comes to hardy greens, you can’t beat vibrant and nutritious kale and cavolo nero.
British apples and pears are still going strong. We’ve got Bramleys, Braeburns and Conferences to keep desserts seasonal.
From January we’ll be getting Yorkshire forced rhubarb; it’s vivid pink, sharp and elegant.
Earthy and sweet Jerusalem artichokes and beetroot make hearty winter dishes. Top herbs of the season are sage, thyme and rosemary that will bring depth to roasts and root veg dishes.
Winter produce loves roasting, butter and strong seasoning. Let the natural sugars come
