Spiced Apple & Pear Crumble With Oat & Hazelnut Topping
Makes 6-8 portions. Cost per portion £1.14
Ingredients:
FRUIT BASE:
- 4 apples (Bramley or Cox), peeled, cored, sliced
- 3 pears (Conference or Comice), peeled, cored, sliced
- 50g light brown sugar
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp ground nutmeg
- 30g butter
- Zest of 1 orange
- Optional: 50ml apple juice or cider for a saucier finish
CRUMBLE TOPPING:
- 100g plain flour
- 75g cold unsalted butter, diced
- 75g soft brown sugar
- 50g rolled oats
- 50g chopped toasted hazelnuts
- Pinch of salt
Method:
1. Melt butter in a large pan. Add apples, pears, sugar, spices, and lemon juice. Cook gently for 5-7 minutes until the fruit softens slightly but still holds shape.
2. Stir in the orange zest (and cider if using), then transfer to a baking dish.
3. To make the topping, rub butter into flour until it resembles breadcrumbs. Stir in the sugar, oats, hazelnuts, and salt.
4. Spoon the crumble mix over the fruit – don’t press it down. Bake at 180°C (fan 160°C) for 30-40 minutes until golden brown and bubbling.
5. Serve warm with vanilla custard, pouring cream, or spiced crème anglaise.
